If you want some fantastico pollo in Matagalpa I highly recommend La Posada Rotiseria. It’s off the beaten path, and a long time local favorite; not a place at all overrun with tourists, of which there are few in Matagalpa anyway. Levi got fried chicken. This fried chicken was REAL fried chicken. It looked like it had been fried in a well-seasoned, 50-year-old kettle with the same grease used to fry the previous day’s worth of fried chicken. It was not fast food KFC by a long shot. Roberta and I both got Pollo de la Plancha which was…well I don’t want to get wordy…it was the best chicken we’ve had in Nicaragua since we got here four months ago. La Posada is a very old “mom and pop” place. Much of it is furnished with plastic lawn furniture. We Made a Grill

Actually, Roberta made a grill. She’d been wanting to grill for a long time. I think because there is a place around the corner with a huge grill that cooks about 40 chickens every night on the sidewalk and it smells fantastic from our house. The problem is that we couldn’t find any affordable grills anywhere. The only one we found was a very small Weber grill in the big hardware store, Lugo, but they wanted about $125 USD for it. Too much for something we’d probably use every night for a week out of excitement and then not touch for months and would just end up a rusted heap on the back patio. I speak from experience, here. Walking around Granada we always see people grilling; either small restaurants with outdoor grills or individuals, but the grills are always hand made out of barrels or some other container.
